    "Firecrackers"

    Super easy and delicious!

    Take a jalepeno pepper, (be sure to wear gloves while handling peppers!) make a slit down the pepper the long way, scrape out the seeds, stuff with a peeled and deveined shrimp or a chunk of non melting cheese such as Queso Blanco or Fontina, Wrap in a strip of bacon, secure with a toothpick or skewer and grill!

    not that I am adverse to bacon but can you wrap these in something else if someone does not eat pork?...just curious...they look so awesome I would like to offer them at a party but need to a have a porkless (wierd word) option for some dear friends ....

    I guess you could use Turkey Bacon, but I can't stand Turkey Bacon so you'll have to be the one to try it. They also make a Beef Bacon, I've seen it in the stores but never tried it.

    Would a slice of turkey (lunchmeat work?). Hmm, I'd probably try proscuitto myself but that is pork. Or a slice of Salami or pepperoni? Or what about very thinly sliced cucumber like Japanese restaurants use for rolls with no rice in them??? OK now I'm thinking of all these yummy things and I'm stuck at work, far away from my bbq grill.

    yes I do. even with the "cooked" meats, I don't think that would be terrible. But I'm not the one who has to stay away from pork, so I would do the bacon or Proscuitto (yum!!).

    I just wondered when I saw your cucumber suggestion.

    I love proscuitto, but I would think it would dry out if you tried cooking it like this? I don't know, I can't afford it to try it anyway LOL

    ROTFLMBO--even if they did, meat is the only thing I refuse to buy there! so that's out!

    I do splurge once in a while and purchase it, but I use it in a grilled chicken recipe where its rolled up inside the chicken, I'll have to make it again sometime and take pics so I can post the recipe, its delicious!

    Cucumber has such a high water content that it probably would be OK on the grill and the grill marks would look awesome. Hey, bet zucchini sliced the long way would work great. And, Eggplant too! But my tastes run more towards the bacon/proscuitto. Yum. My Publix slices proscuitto one slice at a time if you want it, so you would only have to buy enough for however many poppers you're grilling.

    Those look great!!!! We're grilling this weekend for sure! How long does it take to cook bacon all the way through on the grill?

    I never timed it actually. We hang out and have a beer (low carb of course) while we're cooking so I've never really paid much attention. Dosen't seem too long, its easy to tell by looking at it when its done though.

    Unfortunately, the compound (apartment) I live in doesn't allow you to have a grill. Do you think I could make these under the broiler?

    I am sorry Mindy I am still not getting the jalapeno with the cucumber wrapped around it? I tried ..I even thought about it overnight...I am not a deep thinker.....anyway um....it is just not working for me ya know?....cucumber around a jalapeno stuffed with cheese and then grilled? hmmmmm????? nope missed it...sorry OOOXXX
